Its belemnite and micraster chalk helps retain water while encouraging wines with racy acidity, minerality and longevity. Producers range from grand houses such as Pol Roger, whose 2012 vintage uses Chardonnay from leading Côte des Blancs villages, to growers such as EPC, whose 2014 Vertus bottling is 100% Chardonnay. Expect lemon, grapefruit, white flowers, peach, brioche and a lovely saline finish.
