Gavi sits in the province of Alessandria, where vineyards lie often around \u003cstrong\u003e250‑350 metres above sea level\u003c\/strong\u003e on limestone, clay and sandstone soils, benefitting from cool night breezes and markedly warm sunny days. These diurnal shifts help Cortese grapes retain crisp acidity while developing generous flavour.\u003c\/p\u003e\n\u003cp\u003eThis wine comes from old Cortese vines (around 30 years old) trained via the \u003cem\u003eGuyot\u003c\/em\u003e method. Fermentation is done in temperature‑controlled stainless steel (roughly 12°C), with about \u003cstrong\u003e20 days\u003c\/strong\u003e active fermentation followed by resting on lees for three months. \u003c\/p\u003e\n\u003cp\u003eOn the nose there are bright citrus (lemon, lime), orchard fruit (pear, possibly peach) and delicate floral\/white blossom hints. The palate is mineral and crisp, with a peachy finish—elegant rather than opulent. \u003c\/p\u003e\n\u003cp\u003eFood pairings? This style of Gavi is marvellous with seafood (grilled fish, prawns, shellfish), lighter pastas (especially with vegetable sauces), white meats (chicken, veal), and soft cheeses.
