The 2019 Pinot Noir from The Hermit Ram is a wild and wonderful expression of New Zealand’s North Canterbury region. Made by the ever-adventurous Theo Coles, this wine comes from a mix of gravel, clay, limestone and volcanic basalt soils — giving it a savoury, mineral backbone that’s unmistakably tied to place. North Canterbury’s cool climate and dry conditions allow for long ripening, helping the grapes retain freshness and complexity. Theo works with organically farmed vineyards and employs natural winemaking: native yeasts, no fining or filtering, and minimal sulphur — resulting in wines that are as raw and alive as the landscape they’re from.
The 2019 vintage is vibrant and energetic. It bursts with wild red cherry, pomegranate and fresh herbs, alongside subtle floral notes and a touch of earthy spice. A portion was aged in clay amphora (tinajas), which adds texture and purity. It’s light-bodied yet structured, with zingy acidity and gentle tannins — perfect with roast duck, mushroom risotto or even grilled salmon. Serve it slightly chilled for maximum refreshment and character.
