Having worked behind some of the country's most respected cheese counters over the past 15 years, Jake Chapman likes nothing more than to taste cheese and discuss what makes it special.
For Jake, cheese is a lens through which to explore history, economics, science and ecology. It’s also a world awash with tall tales, gleefully passed down through generations of cheesemongers.
He currently works for Provisions in London, a speciality food and wine importer focused on small artisanal producers.
