The Hautes-Côtes de Beaune, known for its cooler microclimate and limestone-rich soils, offers leaner, more structured expressions of Pinot Noir. In '93, Burgundy saw a classic, cooler vintage—low yields, tricky weather, but superb ageing potential for those who got it right. Rollin Père, a small, family-run domaine in Pernand-Vergelesses with just 12 hectares under vine, absolutely nailed it.

Now with over 30 years of bottle age, this wine unfurls with forest floor, dried cherry, sous bois, and a whisper of truffle.
