The 2000 Bollinger is a brilliant vintage Champagne from one of France’s most esteemed houses, based in Aÿ, at the heart of the Montagne de Reims. Bollinger, family-run since 1829, owns over 170 hectares of vineyards—85% Grand and Premier Cru—lending serious pedigree to its wines. The 2000 vintage was marked by a warm, dry summer, yielding ripe, concentrated grapes. This wine, a blend of Pinot Noir and Chardonnay, spent over a decade on lees, developing Bollinger’s signature richness and complexity.
In the glass, expect aromas of roasted nuts, brioche, dried apricots and honeyed citrus, followed by a creamy, powerful palate with fine mousse and a long, mineral finish.
