The 2003 Chablis ‘Cave de Chablis’ hails from the heart of northern Burgundy, France, a region famed for its pure, mineral-driven Chardonnay. The terroir here is classic Kimmeridgian limestone, rich in marine fossils, lending the wine its signature flinty edge. The 2003 vintage was unusually hot, resulting in riper fruit and rounder texture than a typical Chablis, with notes of baked apple, lemon curd, and a touch of honey, balanced by a whisper of salinity.
Cave de Chablis is a respected co-operative, producing a large proportion of the region’s wine. Though co-ops can be hit or miss, this bottling punches above its weight in terms of value and authenticity.
A lovely match for oysters, grilled sea bass or even soft cheeses like Chaource. Serve well chilled to bring out its freshness—this is Chablis with a sun-kissed twist!
