2008 Brut Vintage, Billecart Salmon - Vallée de la Marne
From Mareuil-sur-Aÿ in the Vallée de la Marne, Billecart-Salmon’s 2008 Brut Vintage is a deliciously precise expression of Champagne’s chalky terroir and cool-climate freshness. Founded in 1818, the family-run house farms 100 hectares and works with grapes from around 40 crus. This classic 2008 combines 65% Pinot Noir from the Montagne de Reims and Grande Vallée de la Marne with 35% Chardonnay from the Côte des Blancs, spending nine years ageing on lees in chalk cellars. Expect golden colour, fine bubbles, lemon, almond, Mirabelle, pastry and biscuit, with lovely tension and a dry finish. Brilliant with scallop carpaccio, delicate fish, vegetable ravioli or roast veal.
