The 2015 Chardonnay Les Gryphées VV by Jean-François Ganevat hails from the heart of the Jura region in eastern France — a lesser-known gem nestled between Burgundy and Switzerland. Ganevat, a former sommelier turned cult winemaker, crafts biodynamic wines with precision and soul. "VV" stands for vieilles vignes, or old vines, with some plots over 60 years old, rooted deep in limestone and marl soils — classic Jura terroir that gives the wine its racy minerality.
2015 was a warm, balanced vintage in the Jura, yielding fruit-forward wines with depth. This Chardonnay is barrel-aged without new oak, allowing pure citrus, stone fruit and saline notes to shine. There’s a whisper of nuttiness and a creamy texture, underpinned by electric acidity.
Pair it with roast guinea fowl, Comté cheese (naturally!), or a buttery mushroom risotto. It's a wine for thinkers, dreamers, and long Sunday lunches.
