From Pouilly-sur-Loire in the Upper Loire, across the river from Sancerre, the 2024 Pouilly-Fumé ‘Léon’ from Jonathan Didier Pabiot is a terroir-driven Sauvignon Blanc with plenty of personality. The domaine farms around 20 hectares, organically since 2006 and biodynamically since 2016. Léon comes from 10–50-year-old vines on clay-limestone soils, with caillottes and Kimmeridgian marl bringing classic mineral character. The 2024 vintage is bright and energetic, showing lemon, lime, gooseberry and white peach, with smoky flint, chalk and a lovely saline streak. Crisp, focused and refreshing, it finishes cleanly. Enjoy with oysters, scallops, sea bass, asparagus or goat’s cheese.
