A true curiosity from Avize, Agrapart’s Complantée is one of the most fascinating bottlings in Champagne. Named for the traditional practice of complantation—planting multiple grape varieties in a single plot—this Grand Cru cuvée blends all seven authorised Champagne grapes: Chardonnay, Pinot Noir, Pinot Meunier, Arbane, Petit Meslier, Pinot Blanc, and Fromenteau (Pinot Gris).
From a tiny 0.2-hectare parcel in Avize, Pascal Agrapart farms biodynamically and without herbicides, creating minuscule quantities of this bottling (just a few thousand bottles annually). It’s fermented in old oak and aged on lees for years, with minimal dosage and no filtration.
The result? A wild, textured, vinous Champagne that hums with notes of spiced pear, quince, orange peel, crushed stones and a whisper of herbs. It’s complex, layered, and more wine than fizz—perfect for Burgundy lovers venturing into Champagne.
Pair with roast guinea fowl, aged Comté, or mushroom risotto. A cerebral, thrilling bottle
