A blend of two neighbouring lieux-dits just outside Courgis, Bel Air et Clardy is a signature cuvée from Alice and Olivier De Moor—Chablis minimalists and natural wine trailblazers. Though technically outside the AOC Chablis zone, this wine shares the same prized Kimmeridgian limestone terroir, lending it the unmistakable tension and salinity of classic Chablis, but with a wilder edge.
In 2023, the De Moors navigated a tricky growing season—cool spring, warm summer—with their usual organic rigour and hands-off winemaking: native yeast fermentations, zero additives, no fining or filtering, and just a whisper of sulphur at bottling.
The result is electric: notes of lemon zest, green apple skin, chalk dust, and a subtle floral lift. It’s lean but textured, with mouthwatering acidity and a mineral finish that lingers like sea breeze on stone.
Brilliant with sashimi, goat’s cheese, or herby roast chicken.
