From the hands of natural wine icons Alice and Olivier De Moor, the Mont de Milieu 2022 is a strikingly pure expression of one of Chablis’s top Premier Cru sites. Located on the right bank of the Serein River, Mont de Milieu is famed for its steep slopes, rich Kimmeridgian limestone, and sun-soaked exposition—yielding wines of power and finesse.
The De Moors farm organically and eschew all chemical intervention, crafting wines with native yeasts, no fining, filtering, or new oak. Production is tiny and allocation-only—blink and it’s gone.
2022 was a warm, balanced vintage, and this bottle sings with ripe citrus, white peach, crushed oyster shell and wild herbs. There’s a gorgeous tension between creamy lees texture and crackling minerality, finishing long and salty.
Pair with Dover sole, scallop crudo, or simply a plate of oysters. This is Chablis with soul, depth, and unfiltered charm.
