NV Extra Brut Guillaume S. Selosse, Largillier

Guillaume S. Selosse’s Largillier is a seriously characterful Extra Brut Blanc de Noirs from Ville-sur-Arce in the Côte des Bar, Champagne’s Pinot Noir heartland. Made with grapes from Jérôme Coessens’s 3.37-hectare Largillier monopole, its clay-limestone soils sit over Kimmeridgian geology, giving the wine both weight and saline freshness. Guillaume Selosse, son of legendary Anselme, began the project in 2012, producing roughly 3,500 bottles per vintage. The wine is non-vintage, with long barrel ageing on lees adding remarkable depth. Expect ripe pear, honey, toasted nuts, dried fruit and umami, finishing savoury and mineral. Pair with roast chicken, veal, turbot or Comté.
