Crafted in Cumbria via low‑temperature drying, it has a nutty flavour and firm “bite” that makes each dish texture-rich . Use it in ragù , mac & cheese, pesto, vodka sauce, spicy red sauces, or speedy chorizo–shiitake creations . For wine, match the sauce: pair tomato or ragù with mid-bodied Italian reds like Chianti or Barbera; creamy or cheesy dishes suit a unoaked Chardonnay or Soave. A zesty Verdicchio or Falanghina works beautifully with spicy or pesto versions.
